Apple Knishes

4 C Sifted Flour 1 ½ t Salt

2 Eggs 1 ¼ C Sugar

1 T (heaping) Shortening ½ C Oil

3 lbs Apples (Jonathon or McIntosh)

1 oz Yeast (dissolve in warm water)

Mix together flour, oil, shortening, eggs, salt and yeast. Don’t add all of the flour in the mixing bowl; add water (1/4 cup) until it is the right consistency. Knead into a small ball. Let rise.

Peel, core and grate apples. Grease pans with shortening. Get sugar ready. If apples are juicy, add about 1 T cornstarch. Roll dough to about 1/4 to 1/2” thickness. Cut 2 ½” circles; roll each circle; roll again to about 5” diameter. Put a heaping T of apple in center of circle; put 1 T of sugar over apple; bring up dough in diaper fashion. Bring two sides to middle; bring up 3rd side and seal with 1st 2 sides. Place in pan ½” apart.

Bake at 375 degrees for about 20 minutes.

When very lightly browned, turn out from pan – put upside down on plate for a few minutes; then turn right-side up on plate. Let cool. Makes about 20.
