This is the headstone of my great grandfather Joseph Borris, and I would like a translation of as much of the inscription as possible.
He’s buried in Edmonton Federation Cemetery, Montagu Road, North London.
He lived in Dubno (Ukraine) until he emigrated to London with his wife (Jane Borris née Fishman) and three children at the beginning of the twentieth century.
He died 20th August 1921.

the honored YOEL son of Reb Tovya

He passed away after the departure of the holy Sabbath, 17 Av

5681, at the age of 51 years.

May his soul be bound up in the bond of life.
================================================
Yoel [pronounced YO-AYL] is a Biblical name; it is Hebrew for Joel.

'Reb' is an honorific; it does not mean rabbi.

The name “Tovya” is a Biblical name. Nowadays, this name has morphed into “Tuvya”, which has become more common. Most people would probably read the name as Tuvya. Without vowels, it is hard to be sure how the name was pronounced in this case.

The "departure of the Holy Sabbath" is the time after the Sabbath ends, after sunset, on Saturday evening.
