The Hebrew date here is very unclear.

If the secular date of January 14th, 1941, is correct, then the Hebrew date would be the 15th of Tevet 5701, if she died before sunset, or the 16th of Tevet 5701, if she died after sunset.

On the plaque, it does say Tevet. However, the year is given as 5702. Also, instead of a specific date appearing before the month (which is the usual way to express a Hebrew date), it appears afterwards, and seems to say 28. The 28th of Tevet, 5702, corresponds to January 16/17, 1942.
