This stone is a bit difficult to read, but here is what I can make out:

Here lies

Upon these I weep,

upon the death of our mother,

the woman NECHEH Rosenboim

daughter of our teacher, the rabbi, Shmuel [?].

She was born 12 [?] of the month of Kislev

of the year 5611, she died

20 [?] of the month of Kislev of the year

5664. May her soul be bound up in the bond of life.

Her father's name is preceded by an abbreviation that represents the words "our teacher, the rabbi". This usually indicates that the person had rabbinical ordination, not necessarily that he was the rabbi of a congregation or community. (I need to mention that I have come across cases where this abbreviation was used in error, without its significance being fully understood).

I am reading her father's name as Shmuel, although I'm not 100% sure that this is correct. Shmuel is the Hebrew for Samuel; however, this does not necessarily mean that Samuel was his secular name.

Unfortunately, the dates of birth and death are also hard to read, although I am sure that the month was Kislev in both cases and I am fairly confident of my reading of the years.

If I have the date of birth correct: the 12th of Kislev of the year 5611 began at sunset on November 16th, 1850, and ended at sunset on the 17th. The exact date might not be November 16th/17th, but should be within 2 weeks of that date, either before or after.

In order to decipher the date of death, I converted December 9th, 1908, to the corresponding Hebrew date, which gives the 15th or 16th of Kislev of the year 5669. I do not see the numbers 15, 16, or 5669 on the stone.

However, converting December 9th, 1903, to the corresponding Hebrew date results in the 20th of Kislev 5664, which matches my best reading of what is engraved on the stone. Therefore, I think that it is possible that she passed away in 1903 and not 1908, and that the engraver misread the year.

Do any of the above names and dates match those of your great-grandmother's sister?

The first line is definitely in plural:
"Of [or "upon"] these we weep"

The word translated here as "upon"or "of" actually means "about" - and is used like that in mordern Hebrew when you want so ask a person what they are crying about.
