On  Response
8/6/2014 8:28 PM signed by Moshe David son of Arye
and Yitzchok son of Zalman Zev

There is no mention of the name Doppelt. As a matte of fact there are no Family names mention on this Kesuba (marriage contract)
I hope I was a help.
8/7/2014 10:09 AM as a formal (halakhic) contract, it is signed not by the parties, but by the two witnesses who attest to the fact that this what the parties had agreed to. (technically, what the groom "said".) acceptance is the physical act of taking this piece of paper.

for legal purposes, these witnesses are supposed to be dependable (i.e. "observant"), and impartial, so preferably not related to either party. often, though not always, they are students or assistants of the rabbi, and not friends or family of the bride or groom.
