I would like a translation of the Hebrew signatures. The Hebrew witness names may include Abraham Hayem, David Israel (perhaps ben Ephraim = Gumpel), Moise Israel, Breinzine (Breyna) Abraham, Esther Moise Treve or Beer. It looks like some may have signed their first name in French, and other names in Hebrew.

On  Response 
12/20/2012 2:42 AM on the left, under 'cidessus' you have Avraham ben Chayim;

on the rigth, under 'les jour' Izik ben ...(Leiser?);

in the middle ... ben/bat Efraim;

below this could read Diane in French, and bat reb Efraim in Hebrew. there are more Hebrew letters to the middle which could mean "Fogel", a common female given name.

it would definitely help to see the names (also places can be involved) mentioned in the document.
12/23/2012 6:03 AM I don't think the letters after the name Ephraim are a shin or a yud. They look like a bet and a raish as an abbreviation for ben (son of) reb (Mr.). In other words Ephraim son of Chaim.
